New York Strip Sandwiches
3 lbs. New York Strip Loin roast
1 tbsp. Kosher salt
2 tsp. black pepper
24 small dinner rolls or slider buns
2 tbsp. butter, melted
2 tbsp. dried parsley
Preheat oven to 450-degrees F. Season roast with salt and pepper, place on a wire rack in a large roasting pan or sheet pan and place in oven and bake for 15 minutes. Reduce heat to 325-degree F and continue to roast another 55-60 minutes. Once roast measures 120-degrees F internally, remove from oven and allow to rest 20 minutes before slicing.
Preheat oven to 350-degrees F. Place the rolls or slider buns on a large sheet pan, brush with melted butter and sprinkle with dried parsley. Bake until lightly browned and toasted, about 5 minutes.
Slice the roast against the grain as thinly as possible. Grab a bun and add a slice or two of roast beef to bottom of roll and top with cheese sauce and the top of the bun. Serve.
