Italian Sausage Hoagies
8 Italian Sausage, cutting each into 3 pieces (mild or hot)
1 tbsp. olive oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 cup onion (red, yellow or white), sliced
2 tsp. minced garlic
½ tsp. salt
½ tsp. black pepper
1 tsp. Italian seasoning
1 ½ cups marinara sauce
2 cups shredded mozzarella cheese, shredded
Hoagie buns
Preheat oven to 375-degrees F.
In a large skillet, over medium heat, add the olive oil. Sear the sausage pieces on each side until browned, about 2-3 minutes on each side. Remove to a plate and set aside.
Add more oil to the pan if needed, then add the bell peppers and onions, sauté until soft, 4-5 minutes, then add minced garlic, salt and pepper to the pan. Sauté another 1-2 minutes. Add the sausage pieces back to the pan and sprinkle with Italian seasoning.
Spray a 9 x 13-inch baking dish with cooking spray. Add the sausage mixture to the baking dish. Add in the marinara sauce and stir. Cover with foil and bake at 375-degrees for 15-20 minutes, or until the sausage is cooked through.
Turn on oven broiler to low. Spray a second 9 x 13-inch baking dish with cooking spray. Add some of the sausage mixture to a hoagie bun, top with some shredded mozzarella cheese and add to baking dish. Continue with remaining buns. Place under the broiler for a couple of minutes. Remove and serve.
