I’m a firm believer that your taste buds change as you age. I remember when I was a kid, I was not a big fan of fish or seafood of any type for that matter. I liked to “fish”, but, not eating my catch. Good thing too, or I’d have starved to death (I wasn’t a very good fisherman either!) But as I’ve aged, I’ve discovered that I do like fish, of all kinds and all kinds of seafood (especially lobster and crab legs, but, I work in radio, so, can’t afford that often!).
I stumbled across a delicious Cod Loin recipe that I shared at 8:20am today on AM1370 KDTH and “Cookin’ with Kaye”, my weekly cooking show brought to you Cremer’s Grocery, Van’s Liquor Store, HappeeSmith Productions and The Vogt Group. I made “Lemon Garlic Butter Cod Loins”. Cremre’s has a 10lb. box of cold water Atlantic Cod Loins for $8.99lb. Or, you can buy smaller portions for $10.99lb., it you just want a few. My co-workers loved the combination of flavors and seasonings, espcially the crushed red pepper flakes that gave the recipe and nice kick! But you’ll pick up on the fresh lemon juice, lemon pepper seasoning, garlic, melted butter, and basil.
I want to also mention how easy this recipe is. Took 15 minutes to prep, 20 to bake and it’s on the table. Add a side salad and some steamed veggies and potato and it’s “Money”! So, during Lent, and you are looking for a tasty fish recipe, give this one a try! Oh, and it plates up nicely as well. Father Andy Upah complimented me on the wonderful presentation! Lemon Garlic Butter Cod Loins
8 cod loins (4-5 oz. each)
1 lemon
½ cup unsalted butter, melted
2 cloves garlic, minced
2 tsp. lemon pepper
½ tsp. dried basil
½ tsp. crushed red pepper flakes (optional)
1 tbsp. dried parsley
Preheat oven to 400-degrees F. Slice ½ of the lemon into slices, and juice the remaining half of the lemon and set aside.
Coat a 9 x 13” baking dish with cooking spray and lay lemon slices over the bottom of the dish. Rinse cod loins in cold water and pat dry with paper towels and place over the lemons in baking dish.
Whisk together melted butter, garlic, basil, red pepper flakes and reserved lemon juice. Pour mixture over the cod. Bake 15-20 minutes, or just until opaque and the fish flakes easily.
Pour a few tablespoons of the buttery mixture in the bottom of the dish over cod loins and sprinkle with dried parsley. Serve.
